KM cubers scaling on Oakland water. Oakland's water is moderately hard, and on a busy Hoshizaki cube head that means scale on the evaporator and slow harvests. We descale, swap water filters, and tell you straight whether the unit needs a deep clean or a part. With the volume in Temescal and Jack London Square, a regular cleaning interval keeps the bin full.
Stuck hot-gas harvest valve. The most common no-ice call on a Hoshizaki is the hot-gas valve hung the wrong way, so the harvest cycle never finishes and the machine runs nonstop. We isolate the valve, check coil resistance against spec, and fit the OEM valve. We don't use aftermarket coils, they fail early on these.
Sushi cases and prep tables holding warm. Oakland has plenty of sushi counters, and Hoshizaki display cases and prep tables run a discharge-air thermistor that drifts warm with age. A case meant for 33 ends up at 41, a violation before a customer notices. We keep calibrated thermistors on the truck for a common repair with a part we usually stock.
