What we close on the truck.

Scale on the evaporator plate. Santa Clara Valley water runs moderately hard, and on a Hoshizaki KM cuber that means scale builds on the evaporator plate steadily if the descale schedule slips. Harvest cycles drag, cubes come out thin, and eventually the machine won't release ice at all. We descale properly, check the water filter, and set a realistic interval instead of the twelve months the manual assumes.
Auger motor and gearbox failures on flake units. Hoshizaki flake and nugget machines run an auger to shave and push ice, and the auger motor or gearbox is the part that wears out under continuous bar use. A grinding noise or a machine that fills the bin slower than it used to usually points here. We test the motor draw before condemning the gearbox.
Water inlet valve and float switch faults. A machine that won't start a fill cycle, or one that overfills and floods, usually traces to the water inlet valve or the bin's float switch. We test both under actual operating pressure rather than swapping parts on a guess.
