What we close on the truck.
- Contra Costa hard water on KM heads. Concord runs on Contra Costa Water District supply, and it's hard. On a Hoshizaki KM head that means scale on the evaporator, slow harvest, thin or cloudy cubes, and eventually a machine that won't drop ice. We see it constantly in the bars and taquerias. A proper descale and fresh filter usually brings production back; if the float, water valve, or harvest probe is fouled past saving, we carry those on the truck.
- Stuck hot-gas harvest valve. When a KM head runs and runs but never drops ice, it's often the hot-gas valve hung the wrong way so the harvest cycle never completes. We isolate the valve, check coil resistance against spec, and swap the OEM valve. We don't fit aftermarket coils, they fail early on these.
- Sushi case and prep-table thermistor drift. Hoshizaki sushi display cases and prep tables in the downtown kitchens use a discharge-air thermistor that drifts warm with age. A case meant for 33 ends up at 41, a health-code violation before anyone notices. We keep calibrated thermistors on the truck for a same-visit fix.

Why does my Hoshizaki keep losing capacity?
Concord's water is hard, so scale builds fast on the KM evaporator and kills production. A descale and a regular filter change usually fixes it. If it keeps happening, the water valve, float, or harvest probe may be fouled, and we'll replace those off the truck. -
Can you prioritize a down ice machine?
Yes. A dead Hoshizaki costs a kitchen money by the hour, so commercial outages go to the front of the line. Tell the dispatcher you're down. We run 7AM to 7PM, seven days, same number after hours.
