High-volume hotel machines see this faster than a bar unit just from constant cycling. We descale the evaporator and reservoir, clean or replace the float switch, and check the water pump.
F-series flaker grinding or stalled. Hoshizaki flakers use an auger inside the evaporator, and a worn gear motor bearing or a binding auger shows up as grinding noise or the machine stopping cold. We pull the auger, check the bearing and gear motor, and replace what's worn before a seized auger cracks the evaporator.
Machine freezing but not harvesting. If the machine builds a full ice sheet but won't release it, the hot gas valve or the harvest thermistor is usually stuck. We test both and get the harvest cycle timing right instead of just forcing a manual defrost and hoping it holds.
