When one of those quits, the call usually starts the same way: it's warming up and there's product on the line.

- KM cubers losing capacity to scale. Alamo's water is moderately hard, and on a Hoshizaki KM head that shows up first. Scale coats the evaporator plate, harvest gets sluggish, and cube weight drops below the spec-plate rating before the machine quits outright. We descale the evaporator and water circuit, check the filter, and tell you straight whether you're due for a regular cleaning schedule.
- Stuck hot-gas harvest valve. The call we get most on these is a hot-gas valve hung the wrong way. If it won't open, the harvest cycle never finishes and the machine just runs and runs without dropping ice. We isolate the valve, check coil resistance against spec, and swap in the OEM valve. We don't use aftermarket coils on these, they fail early.
- Prep-table thermistor drift. Hoshizaki refrigerated prep tables in the plaza kitchens use a discharge-air thermistor that drifts as it ages, and the box ends up holding 6 to 8 degrees warm. That's a health-code problem before a customer notices. We keep calibrated thermistors on the truck so it's a same-visit fix.
