We check both, clear the ice, and fix whatever's stopping the defrost cycle from finishing.
- Prep table rail warming up. The pan rail on a prep table depends on cold air being pulled up from the base, and if that airflow path is blocked or the fan's weak, the top pans warm up first. We clear the airflow, test the fan, and confirm the rail holds below 41.
- Freezer frost buildup. Heavy frost inside a Continental freezer points to a door that isn't sealing, a defrost heater that's failed, or a defrost timer stuck in the wrong cycle. We find which one it is and fix that instead of just chipping the ice out and hoping it doesn't come back.
