True and Turbo Air reach-ins round out most of these kitchens. A high-volume machine needs more descale and filter changes than the manual says, not less, and we set that schedule up front instead of waiting on a callback mid-event.

Downtown’s restaurants and cafes run Atosa and Continental prep tables, Beverage-Air and Perlick bar and bottle coolers, and undercounter ice behind the espresso bars and juice counters. Most calls are a warm reach-in from a dirty condenser or a tired evaporator fan, a prep table that won’t hold below 41, or a bar cooler icing over on a bad door gasket.
