We clean the condenser and louvers, confirm the intake is not blocked, and check the fan motor and compressor so the box holds again.
Reach-in and undercounter freezer evaporator fan motor failure. On Victory freezers the evaporator fan motor bearings wear out under constant runtime, and once the fan slows the coil frosts solid and airflow across the box drops off. Product at the back stops staying frozen. We replace the shaded-pole or ECM evaporator fan motor, clear the iced coil, and check the defrost cycle so the frost does not just come back.
PT prep table drain clogs and warm cold rail. Decoto taqueria prep tables move a lot of product, and Victory PT units lose the cold rail when the condensate drain clogs and water backs up onto the evaporator. The pan wells creep warm and the salsa and protein sit out of safe range. We flush the drain line, clear the pan, and verify the rail pulls the top pans below 41 degrees before we leave.
