- Thermostat drift on a daily-use reach-in. When a taqueria or corner market calls about a reach-in that won't hold 41, nine times out of ten the thermostat has drifted or given out entirely. I run it against a reference first, since a bad sensor and a bad control read the same to the eye, then recalibrate or replace whichever is actually at fault.
- Misdiagnosed gasket mistaken for a compressor problem. I get called for a compressor that won't stop running, and half the time in a taqueria or corner market the actual problem is a gasket that quit sealing months ago and nobody noticed since the box still held temp, barely. Replacing the gasket is cheap next to a compressor, and it's what I check for before assuming the bigger part failed.
- Compressor running long from a fouled condenser. Ventilation is tight in a lot of these kitchens, and grease finds its way onto the condenser coil faster than in a bigger, better-vented space. The compressor ends up running long stretches trying to move heat past a coil that can't breathe, and eventually it trips on overload or wears out early. A coil cleaning most owners never think to schedule usually turns out to be the actual fix.
