What we see here

A handful of places run small walk-ins out back. The bars carry Perlick back-bar coolers and bottle wells. Ice is mostly Manitowoc and Hoshizaki heads behind the bar or in the kitchen.
The failures track the equipment. Prep tables warming up because the condenser coil is packed with flour and grease and the compressor’s running hot. Reach-in gaskets torn at the hinge so the door never really seals. Evaporator fan motors seizing and icing the coil. On the ice machines, Lafayette runs moderately hard water off the local supply, so we see scale on the evaporator plate, slow or cloudy harvest, and float valves sticking. Most of that is a deep cleaning, a descale, and a new water filter, not a new machine.
