Follow the equipment instructions for cleaning the accessible door and seal. Do not pull a gasket from its channel, adjust hinges, force a latch, apply heat, or make a seal from tape or another material. A door observation helps define the time line but does not name a failed component.
Keep the area around the door and equipment clear enough for safe access. If a rack, floor condition, or nearby storage blocks the door, document it and correct only what staff can safely move under the bakery’s procedure.
Separate temperature from humidity clues
Record temperature and humidity as separate observations. A display value, a handheld reading, a dough result, and visible condensation are not automatically the same measurement. State the method, location, time, and selected program for each record.
Look for visible water, condensation, frost, a blocked drain, or a change in the cabinet’s normal sound from the operator side. Do not scrape frost, pour chemicals into a drain, remove a cover, or reach near a fan, heater, sensor, or water path.
If the product or dough outcome changes, record the production observation without turning it into a control diagnosis. A retarder-proofer can show a product complaint and an equipment complaint at the same time, and the sequence matters.
Check controls and alarms safely
Copy an alarm, display message, light pattern, program label, or lockout exactly as shown. Record the normal operator action used to acknowledge it, if the manual or bakery procedure permits that action, and what happened afterward. Do not reset power repeatedly or change program, set point, and loading together.
A normal display does not prove that the measured cabinet condition is correct. A warning does not identify the part. Sensor, heater, valve, fan, control, door, drain, and refrigeration conditions may produce overlapping observations. Internal testing is needed before an order is placed.
If a breaker trips, do not keep resetting it. Smoke, sparking, burning odor, damaged wiring, water near electrical equipment, or an unsafe hot surface is a stop condition. Keep people clear and follow the bakery’s safety procedure.

List the equipment location, loading route, keys, production schedule, cleaning restrictions, floor protection, contact who can approve work, and the safe time for access. Keep racks, dough, ingredients, and cleaning chemicals out of the service path according to the bakery’s procedure.
Send the technician the program record, readings and methods, door observations, alarm text, visible water or frost, loading and door history, recent cleaning or power event, last normal cycle, model, and access instructions. Say what was not opened or adjusted.
Protect the production record
Follow the bakery’s product and batch-handling process when the cabinet is outside its normal operating record. Mark affected batches or racks according to that process and keep the decision with the responsible bakery role. Do not claim that one successful program makes earlier drift irrelevant.
Do not promise a particular recovery time or a specific repair result. The service record should say what happened before and after a normal operator action, while the diagnostic report should state measured findings and proposed work.
